This summer, we decided to join Fresh Fork Market (a community supported agriculture service). Each week, we pick up a bag full of locally grown/produced food, most of which is organic. We are six weeks in and have been thoroughly enjoying the experience. Some of the items in the bag are familiar to us, but others force us to step out of our culinary comfort zone. The responsibility to figure out what to do with all of the produce falls on my shoulders and I've found my menu planning has to be flexible. My successes include roasted beets, snap pea soup, and stir fry with garlic scapes. Unfortunately, we have also had a miss or two. This family is definitely not a fan of kale chips. I've seen more Pinterest recipes for this snack than I can count, so I thought we'd give them a try . . . not even close to yummy.
Some items need to be used fairly quickly since they aren't sprayed with
preservatives. Recently, we received a basket of
strawberries that needed to be consumed asap. I looked at Mate and told
him I would make jam . . . wait, I don't know how to make jam . . . why
did I say that? Anyway, off to work he went while I set out to make
use of some too delicious to go to waste strawberries. Here's how that
went:

I don't know if it helps, but I pop kale in any saute that I would usually put spinach in. I put kale in fajitas/enchiladas, stir fry, pasta... The flavor is a little different, but I can usually sneak it in that way! Since kale is bitter, i like to pair it with sweeter veggies: caramelized onions, butternut squash, beets, sundried tomatoes, etc. I also love kale raw in salads. Choose a vinegar for a vinegarette, add some other items (great place for leftover roasted beets, feta, and balsamic!), and toss together. Last thing: I make what I call 'savory bread pudding' or strata with stale bread, eggs, cheese, milk and veggies. Kale is great in that one!
